Pintertest….Jello Cookies

Little A is back on gluten for 4 months so she can get tested for celiac, so I have been excited to try out some yummy gluten filled treats! This was first on our list to try because they are so bright and summery looking and really who doesn’t love anything Jello?

I love the way these cookies look but I have to say they were too sweet for all of us (except the hubby, he has a real sweet tooth.)  So, I made one batch without rolling in the Jello and we all loved them!  I will definitely make them again, I can’t wait to try different flavours.

Here’s what you need….

3.5 C. Flour

1 tsp Baking Powder

1.5 C. Salted Butter (I used vegan Becel)

1 C. Sugar

1 Egg

1 tsp Vanilla

4 (3 oz) Pkg Jello (I used Lime, Grape, Cherry and Blue Raspberry)

This is what you do….

Preheat oven to 350.  Beat butter with mixer until creamy.  Add sugar and beat until light and fluffy.  Blend in egg and vanilla.  Mix flour and baking powder in a separate bowl.  Gradually beat in flour mixture.  Divide dough into as many sections as you have Jello flavours.  Sprinkle 2 TBSP of Jello into each section.  Knead the powder into the dough.  Roll the dough into one inch balls and roll into the extra Jello Powder (This is the step I skipped to make them less sweet.)

Place 2 inches apart on cookie sheet covered with parchment paper.  Flatten with a cup. Bake for 8-10 min.

  1. Looks great I think they would be a great treat to make for a school party. Thanks for the idea. Instead of cutting out the jello you roll it in could you cut the sugar from one cup to 1/2 or would that make them not sweet enough?

  2. I decided to try these cookies today since it was a rainy day. I put in only 1/2 the sugar and found them to be perfect. These will now be my go to cookies for any function. The kids loved them too. Thank you so much for sharing.

  4. Yes C.C they are very pretty. It was a sad day in our house today (my husband works away and he just left today and it is very hard on the kids) but when my son came home from school he said “Mom you made happy cookies!” So thanks again they should be called Cheer up cookies!
